    Ingredients

      1 medium potato or sweet potato

      2 cups of cannellini beans (cooked)

      1 cup of couscous or quinoa (cooked)

      rosemary and thyme (dried or fresh)

      2. Start by boiling the potato until tender. Once cooked, peel and cut it into chunks.
