Tasty Bean Bites Recipe

    • Servings: 30-40 bites
    • Preparation Time: 15 minutes
    • Cooking Time: 30 minutes

    Ingredients

1 medium potato or sweet potato

2 cups of cannellini beans (cooked)

1 cup of couscous or quinoa (cooked)

rosemary and thyme (dried or fresh)

      bread crumbs to coat

      How-To

      1. Preheat the oven to 180°C.
      2. Start by boiling the potato until tender. Once cooked, peel and cut it into chunks.
      3. In a food processor, combine the boiled potato chunks, cannellini beans, and cooked couscous. Pulse the mixture until well combined and partially mashed, leaving some texture.
      4. Finely chop a sprig of rosemary and a sprig of thyme, and add them to the mixture. Pulse the food processor a few more times to mix in the herbs.
      5. Shape the mixture into small bite-sized balls suitable for your baby’s consumption using your hands. Roll each ball in bread crumbs to coat evenly.
      6. Place the coated bean bites on a baking sheet lined with parchment paper and bake them for approximately 25-30 minutes or until they turn golden brown and crispy. Alternatively, cook in a pan with 1 tbsp of olive oil for 10 minutes, flipping halfway through.
      7. Once cooked, remove the bean bites from the oven and let them cool slightly before serving them to your little one.
