This recipe makes 2 servings and takes about 1 hour to prepare and bake.

Ingredients

For the Base:

  • 1 cup organic whole-grain wheat flour
  • 100g unsalted organic butter
  • 1/4 tsp Himalayan salt
  • 1/4 cup cold water
  • 1 free-range egg yolk

For the Peppers:

  • 1 medium sweet red pepper, raw
  • 1 medium sweet yellow pepper, raw
  • Fresh thyme
  • Black pepper
  • 1/2 tsp dried basil
  • 30g hard parmesan cheese, grated
  • 224ml organic single cream
  • 1 medium free-range egg, beaten
  • 6 cherry tomatoes, halved

Instructions

  1. Preheat the oven to 180°C.

  2. To make the base, mix the flour, butter, and salt in a bowl until it resembles breadcrumbs. Add the water and egg yolk, and mix until the dough comes together. Roll out the dough and place it in a 9-inch quiche dish. Bake for 15 minutes.

  3. To roast the peppers, place them in the oven for 15 minutes until soft. Remove the skins and chop into small pieces.

  4. Once the base is cooked, sprinkle the roasted peppers on top.

  5. In a bowl, mix the thyme, black pepper, basil, parmesan cheese, cream, and egg together. Pour the mixture over the peppers.

  6. Top the quiche with the cherry tomatoes.

  7. Bake the quiche for 30-35 minutes until the filling is set.

  8. Let the quiche cool for a few minutes before slicing and serving.
