Treat Yourself and Your Loved One to These Valentine’s Day Recipes

Plant-based Chocolate Lava Cakes

Valentine's Day recipes

Ingredients:

  • 2 tablespoons Coconut Oil (melted and cooled)
  • 1/2 cup Unsweetened Almond Milk
  • 1/2 teaspoon Apple Cider Vinegar
  • 1/2 teaspoon Vanilla Extract
  • 1/2 cup Almond Flour
  • 1/4 cup Damerera Sugar
  • 2 tablespoons Cocoa Powder
  • 1/2 teaspoon Baking Powder
  • 1/8 teaspoon Baking Soda
  • 1/8 teaspoon Sea Salt
  • 40g Dark Chocolate (squares)
  • 1/3 cup Blueberries

Instructions:

  1. Preheat the oven to 175°C (350°F). Grease two 10cm diameter/240ml ramekin dishes with oil.
  2. In a large bowl, whisk together the coconut oil, almond milk, apple cider vinegar, and vanilla extract.
  3. Add the flour, Damerera sugar, cocoa powder, baking powder, baking soda, and sea salt. Whisk until they are just combined.
  4. Divide the batter between the ramekin dishes. Place a square of dark chocolate into the centre of each ramekin and fill them with the remaining batter.
  5. Place the ramekin dishes on a baking sheet and transfer them to the oven. Bake for 14 to 15 minutes, until the sides are cooked through and the top is mostly firm to the touch.
  6. Allow them to cool for a few minutes, then top with blueberries. Serve and enjoy these decadent, plant-based Chocolate Lava Cakes!

Fruits Dipped in Dark Chocolate

Ingredients:

  • Assorted fruits (strawberries, bananas, apples, etc.)
  • Dark chocolate, chopped (70% cocoa or higher)

Instructions:

  1. Wash and dry the fruits.
  2. Melt the dark chocolate in a microwave-safe bowl or using a double boiler.
  3. Dip each fruit piece into the melted dark chocolate, coating it halfway or completely, as desired.
  4. Place the dipped fruits on a parchment-lined baking sheet.
  5. Let the chocolate set by putting the baking sheet in the refrigerator for 15-20 minutes.
  6. Once the chocolate has hardened, the fruits are ready to be served! Enjoy the combination of the sweet fruits and the rich dark chocolate.

Hot Cacao

  • 2 cups almond milk (or any plant-based milk)
  • 2 tablespoons unsweetened cocoa powder
  • 1-2 tablespoons honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: whipped coconut cream, cinnamon, or shaved dark chocolate

Instructions:

  1. In a small saucepan, heat the almond milk over medium heat until hot but not boiling.
  2. Whisk in the cocoa powder, honey or maple syrup, vanilla extract, and salt.
  3. Continue whisking until the mixture is smooth and well combined.
  4. Pour the hot cacao into mugs and top with optional toppings if desired.
  5. Serve warm and enjoy this healthier twist on hot chocolate!

Heart-Shaped Healthy Valentine’s Day Pancakes

Ingredients:

  • 1 cup whole wheat flour
  • 1 egg
  • 1 tablespoon baking powder
  • 1 tablespoon honey or maple syrup
  • 1 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • Fresh berries or sliced fruits for topping

Instructions:

  1. In a mixing bowl, whisk together the whole wheat flour and baking powder.
  2. Add the egg, honey or maple syrup, almond milk, and vanilla extract to the dry ingredients. Stir until well combined.
  3. Heat a non-stick skillet or griddle over medium heat.
  4. Use a heart-shaped cookie cutter or a spoon to pour the pancake batter onto the skillet, forming heart shapes.
  5. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the heart-shaped pancakes with fresh berries or sliced fruits on top for a nutritious and lovely breakfast.

Pomegranate & Thyme Refresher

Servings: 2

Pomegranate & Thyme Refresher - drink recipe

Ingredients:

  • 1/2 cup Pomegranate Juice
  • 2 teaspoons Pomegranate Syrup / Maple Syrup / Honey
  • 4 large Ice Cubes
  • 2 cups Sparkling Water
  • 1/4 cup Pomegranate Seeds
  • Few Thyme Sprigs
  • Lemon slices for decoration

Directions:

  1. Divide the pomegranate juice and syrup into glasses. Stir to combine.
  2. Add the ice cubes to each glass.
  3. Top each glass with sparkling water.
  4. Sprinkle pomegranate seeds over the drinks.
  5. Garnish with thyme sprigs and lemon slices.
  6. Enjoy your refreshing Pomegranate Thyme drink!

Notes:
Feel free to adjust the quantities of pomegranate syrup, seeds, and thyme according to personal preference. If desired, you can also add a squeeze of fresh lime or a dash of honey for additional flavour. Enjoy!
